Bread and Butter Pudding

Buttered bread layered with raisins and baked in a vanilla custard until puffed and golden.

By Clement Freud

Bread and butter pudding is a thrifty English classic, and Freud approved of thrift. Stale bread, a little butter, raisins, and a simple custard are all it takes to make something that tastes far grander than its parts.

Cooking Instructions

  1. Butter the slices of bread and cut them into triangles. Layer them in a buttered dish with the raisins, overlapping the points.

  2. Whisk the eggs, milk, sugar, and a little vanilla together and pour it over the bread. Let it soak for twenty minutes.

  3. Sprinkle the top with a little extra sugar and dot with butter.

  4. Bake at 350°F for about forty minutes, until the custard is set and the top is golden. Serve warm with cream.
